Basque Potatoes

3 lb. red potatoes or Yukon gold, cut into bite-size pieces
6 Tbs. unsalted butter
3 Tbs. olive oil
3 clove garlic, pressed
1/2 cup fresh Italian parsley, chopped
1 Tbs. fresh thyme, minced
1 1/2 Tbs. fresh rosemary, minced
1 1/2 tsp. smoked paprika
Cayenne to taste
1/2 tsp. salt
1/2 tsp. black pepper

Preheat oven to 375°F.

In large pan, melt butter in oil over moderate heat.

Add garlic, parsley, thyme, rosemary, paprika and cayenne. Add potatoes and toss well.

Roast, basting until potatoes are tender.
