Chocolate Covered Cherry Cookies
1 1/2 cups flour
1/2 cup cocoa
1/4 tsp. baking powder
1/4 tsp. baking soda
10 oz. jar maraschino cherries (or any canned pitted cherries)
1/2 cup butter
1 cup sugar
1 egg
1 1/2 tsp. vanilla
1 cup chocolate chips (or 6 oz. semisweet chocolate)
1/2 cup condensed milk
Combine flour, cocoa, baking powder and soda. Set aside
Drain cherries, reserving 4 t. juice. Set aside.
Cream butter with sugar. Beat in egg and vanilla.
Gradually add dry ingredients and beat until combined. Set aside.
In a double boiler, melt chocolate with condensed milk. Stir in reserved cherry juice.
Shape cookie dough into 1 inch balls.
Place on ungreased cookie sheet and Make a well in the center of each with your thumb.
Place one drained cherry in each well. Spoon 1 t. of frosting over each cherry and spread to cover it, sealing it between the frosting and the dough.
Bake at 350° for 10 minutes or until the edges of the cookies are firm.
